Mary Tabacchi, Associate Professor of Food and Beverage Management at the School of Hotel Administration (SHA).

Mary Tabacchi, professor emerita, joined the School of Hotel Administration faculty in 1978, having previously worked in the divisions of Nutritional Sciences and of Plant Sciences. She has a PhD in biochemical nutrition, biostatistics, and is a well-respected author and researcher. Mary is a consultant for destination health resort development and menu engineering, corporate wellness programs, adventure tourism, healthful food menu design and senior living facilities. She serves on the Boards of Global Wellness Summit and The International Spa Association as well as the New York Spa Alliance.
